A traditionally dried noodle in 10 kg cartons, offered in wide, medium and fine widths — this is the medium. Sweet potato starch is gelatinised, extruded, cooled and sun-dried, giving low moisture and long shelf life with low transport and storage cost. Soak in warm water for 20-30 minutes before cooking; the strips rehydrate chewy and smooth and hold sauce well, suiting hot pot, stews, cold dishes and high-volume kitchen output. Width and packing can be customised.
