【English】Selected from premium shank cuts with a balanced combination of lean meat and natural connective tissue. The yak is raised on pristine free-range pastures at over 3,000 metres in Aba Prefecture, western Sichuan, drinking snowmelt water and grazing on native grasses, giving meat that is low in fat, high in protein and pure in quality. The intermingled tendon and muscle make it ideal for red braising and slow cooking, staying soft and intact, and it is a classic primal cut of western Sichuan plateau yak beef.
