White monoclinic crystalline powder, soluble in hydrochloric acid, dilute nitric acid and acetic acid, slightly soluble in water, insoluble in ethanol, low hygroscopicity. Used as leavening agent for biscuits and milk substitutes, as yeast nutrient in bread making, dough conditioner and nutritional supplement. Packed in 25 kg paper-plastic composite bags.
