Formula NaH₂PO₄. The anhydrous grade is a white powder with a melting point of 190 °C, soluble in water, insoluble in organic solvents and hygroscopic in air; the dihydrate (CAS 13472-35-0) is a colourless crystal that dehydrates to the anhydrous salt at about 100 °C. It is used in detergents, electroplating and rust prevention, and is also the raw material for food-grade monosodium phosphate, sodium acid pyrophosphate and sodium hexametaphosphate. In food and beverages it serves as a buffer, emulsifier and nutrient in bakery goods, drinks, meat and dairy products. Packed with an inner plastic liner and an outer woven bag, 25 kg, 50 kg or 1000 kg net per bag; store in a ventilated, dry place.
