It is supplied in Grades I, II and III: total nitrogen ≥12.5/11.5/11.0 g/100g, amino acids ≥80.0/75.0/70.0 g/100g, amino acid nitrogen ≥9.5/9.0/8.5 g/100g, moisture ≤6.0-7.0%, ash ≤4.5-7.0%, water-insoluble matter ≤0.5-1.0% and pH (1:10) 4.5-7.5; lead and total arsenic ≤0.5 mg/kg, total plate count ≤10,000 CFU/g and coliforms ≤0.3 MPN/g. A pale yellow powder with its own characteristic taste and odour, free of off-flavours and rancidity, suitable for nutritional health foods, solid beverages and amino acid-fortified formulations.
