The product is a white crystalline substance, easily soluble in water and slightly soluble in alcohol, with a mildly alkaline aqueous solution. It is hygroscopic.
It is used in boiler water treatment, medicine and fermentation; in industry as a phosphorus and potassium regulator, a bacterial culture agent and a raw material for making potassium metaphosphate; as a liquid fertilizer and a corrosion inhibitor for ethylene glycol antifreeze; as a nutritional supplement in animal feed; and in food as a fermentation agent, seasoning, leavening agent, buffer and mild alkaline agent for dairy products.
