Formula Na₃PO₄, molecular weight 164. The anhydrous form is a white powder, efflorescent, soluble in water and insoluble in organic solvents, with an alkaline aqueous solution whose 1% solution shows a pH of 12.1 and a relative density of 2.537; the dodecahydrate (CAS 10101-89-0) is a white or colourless crystal that loses its water of crystallisation at about 100 °C. Industrially it serves as a water softener and detergent builder, boiler scale inhibitor, dye-fixing agent in printing and dyeing, flux in enamelling, metal surface treatment agent and water treatment chemical. In food it acts as an emulsifier, nutritional supplement and quality improver.
