Produced from yak raised on free-range pastures at an altitude of over 3,000 metres in Aba Prefecture, western Sichuan, where the animals drink pure snowmelt water and graze on native alpine grasses. The meat is tender yet firm, low in fat and high in protein.
The fresh slices are thinly cut to lock in freshness, cook quickly without becoming dry or tough, and are designed for hot pot, delivering a smooth texture and the creamy, meaty notes of plateau yak beef.
